Apple Crisp
Serves 128
2 - 4" pans

Preheat oven to 350

30 lbs sliced apples
2 lbs 8 oz margarine
7 1/2 C flour
20 C oats
3 C honey
2 tsp cinnamon (optional)

Arrange apples in the 2 greased baking pans. Combine remaining ingredients and mix until crumbly. Spread evenly over apples and bake for 45-50 minutes.


Vegan Applesauce Cake

Makes 3 - 2" pans or 1 baking sheet

Preheat oven to 350.

3 cups oil
6 cups sugar
12 cups flour
12 cups applesauce
3 Tbsp baking soda
2 Tbsp cinnamon
1 Tbsp nutmeg
1 Tbsp vanilla
3 cups raisins

Mix oil and sugar well, add applesauce and mix in dry ingredients. Beat until smooth. Pour in an oiled and floured pan and bake at 350 for 30 - 35 minutes.


Haley's Baked Tofu

Slice 16 # of tofu

Marinate in 1 gallon of 1/2 soy sauce and 1/2 water with basil, oregano, garlic and pepper for a couple hours.

Mix breading:
8 cups flour
2 cups nut. yeast
4 tsp salt
8 tsp each of basil & oregano
2 tsp each of garlic & pepper

Bake on greased cookie sheet for 1 hour or until brown

Serve with brown rice and yeast gravy.


Granola

3 3/4 quarts sunflower seeds
15 quarts oats
3 3/4 quarts wheat germ
1 3/3 quarts sesame seeds

Boil:
8 cups honey
3 cups oil
1/3 cup cinnamon

Bake at 325 for 15 minutes stir after 3 minutes


Basic Bread "Valerie Bread"

18 loaves 14 loaves 10 loaves
20 cups water 16 cups water 12 cups water
1/2 cup yeast 1/3 cup yeast

1/4 cup yeast

1/2 cup sugar 1/3 cup sugar 1/4 cup sugar

Water at 100F degrees, but no more!
May substitute sorghum or honey for sugar.

MIX TOGETHER, (a whisk is best as it oxygenates the yeast and gets it off to a good
Let stand for five minutes, then add:

1/2 cup *oil 1/3 cup *oil 1/4 cup *oil
1/2 cup salt 1/3 cup salt 1/4 cup salt
~50-60 cups flour ~35-40 cups flour ~30-35 cups flour

*If you add less or no oil it will be O.K. fresh but may be harder the next day.
It is your responsibility to bag it after it cools.

Then add flour to the right consistency: until the dough comes away from the side of the bowl. Cover the dough and allow to double in size (about one hour) then punch it down. If time allows, you can let it double again (another hour). The texture improves with each rise.
Now make into loaves, 1 3/4 lbs each (equal weight is important, so every loaf can be removed from the oven at the same time), put in oiled pans, allow to double in size, (at least half-hour-to an-hour (depending on how warm the kitchen is) and bake for 1/2 hour at 350 degrees. It helps to preheat the oven for 15 minutes prior, if the oven was off all night.

You can easily substitute or add ingredients like raisins, cinnamon, sunflower seeds, wheat bran or germ, rye, and sorghum (instead of honey) Too many whole grain ingredients will make it heavy and less likely to rise as high. If you use gluten powder don't use more than 1/2 cup for a small batch or 1 cup for a large batch or it could come out spongy. Since our bread is expected to be vegan, please don't add dairy products!

Do try for a little variety; but remember that folks expect bread to be a more or less “neutral” medium for their sandwiches or toast. Bread with unusual flavoring can be a little off-putting. And lastly, if you use the last of the flour, please refill the bin as a courtesy to the next person.


Vegan Brownies

Preheat oven to 350

Mix together: 2 cups flour
1 cup water.
Cook until thick and cool completely.
Melt 3 cups margarine.
Add 4 cups cocoa and stir until smooth. Cool.
Beat in to the cooled flour mixture:
12 cups sugar
1 1/2 tsp salt
2 Tbsp vanilla
Then add cocoa mixture.
Mix together:12 cups flour, 5 Tbsp baking pwdr
Add to the above ingredients.
You can add 3 cups chopped walnuts or pecans.
Bake in an oiled pan at 350 for 20 - 25 minutes.


Bwownies

Makes 3 pans

4 Cups Margarine
5 Cups Cocoa
1 T salt
32 eggs
16 Cups sugar
8 Cups flour
8 tsp vanilla

Melt Margarine and mix in the cocoa.
Put eggs in mixer bowl and beat.
Add cocoa and marg and mix.
Add remaining ingredients.

Put in greased pans and cook 30 mins. at 350


Vegan Banana Bread
makes 8 loaf pans

Preheat oven to 350.

Sift together:
16 cups flour
1/4 cup baking powder
4 tsp baking soda
Cream until light and fluffy:
2 2/3 cup margarine
6 cups brown sugar
Beat into sugar mixture:
8 cups mashed bananas
Mix together:
1 1/2 cups soymilk or water
2 Tbsp + 2 tsp vanilla
Add liquids to banana mixture, then stir in the sifted flour. Fold in 4 cups chopped nuts if desired. Pour dough into oiled loaf pans and bake 45 minutes or until brown and cooked in the middle.


Farm Banana Tofu Cream Pie
Makes 10 9" pies or 2 steamtable pans

Blend in order given:
20-30 ripe bananas
7 Tbsp vanilla
10 Tbsp lemon juice
5 cups oil
10 cups sugar
1 1/4 tsp salt
ADD: 25 cups tofu
Blend until creamy and smooth. Pour into a prepared pie shell and chill for 2-3 hours. Serve with sliced banana on top.


Vegan Carrot Cake
makes 1 big baking sheet

Preheat oven to 350

4 cups oil
8 cups brown sugar
6 cups water or soymilk
16 cups flour
2 Tbsp + 2 tsp baking pwdr
2 Tbsp + 2 tsp baking soda
2 tsp salt
2 Tbsp cinnamon
2 tsp allspice
12 cups grated carrot
4 cups chopped nuts
2 cups raisins

Blend oil and sugar, add liquid and beat. Sift the flour with remaining ingredients and add to sugar mixture. Add carrots and nuts and raisins and mix well. Bake in an oiled and floured baking sheet for 35 - 40 minutes.


Vegan Chocolate Chip Cookies
makes 24 dozen

Preheat oven to 350

10 cups flour
2 Tbsp baking pwdr
1 tsp salt
2 cups brown sugar
2 cups white sugar
2 cups oil
1 cup water
4 tsp vanilla
4 cups chocolate chips

Sift flour, baking pwdr and salt . Mix sugars and stir in oil. Add water and vanilla and beat till blended. Add dry ingredients to creamed mixture and mix well. Add chips and mix well. Drop by teaspoons on oiled baking sheets. Bake at 350 for 15 minutes or until golden brown on the bottom.


Cream cheese Frosting
Makes 1 1/2 qts

Blend until smooth:
16 oz cream cheese
3/8 cup margarine melted
1/4 cup milk
Add about 4 cups of sifted powdered sugar or until sweet enough.
Add 1 T vanilla
Blend until smooth


Humus
Serves 60

Begin soaking chickpeas early in the day.
15 cups raw chickpeas, soaked 1 1/2 hours and boiled until very soft, about 1 1/2 hours.
30 cloves minced garlic
2 T salt
big dash of tamari
juice from 20 medium lemons
7 C tahini
2 1/2 C(packed)finely minced parsley
black pepper and a dash of cayenne
2 1/2 C minced scallions
Mash chickpeas to a thick paste using buffalo chopper or mixer.
Combine everything and chill thoroughly.
Taste to correct seasonings.


Miso Soup
Serves 40

Dissolve 2 c miso in 4 gallons water
saute together in oil: 10 c thinly sliced carrots
10 c shredded cabbage
10 c thinly sliced celery
5 c thinly sliced onion
10 small cloves garlic
5 tsp freshly grated ginger
2 c dry sherry
6 t vinegar
5 tsp sugar
2 1/2 tsp salt
black pepper to taste
5 c thinly sliced green pepper
optional: chinese veggies, spinach, mushrooms, etc.
Chunks of tofu
oriental noodles
Combine sauteed veggies and miso mixture. Add sherry and raw green peppers and bring to a boil. Lower heat to simmer and add remaining ingredients ( except tofu and noodles add these just before serving).simmer, covered over very low heat, about 10-15 minutes.


Lumps

Single recipe:

Boil 3 minutes: 1/2 cup cocoa
1/2 cup milk
1/2 cup marg.
2 cups sugar
Stir in: 1 tsp vanilla
1/2 cup peanut butter
Pour in: 3 cups oats
Scoop onto plates or trays in lumps. Harden in the freezer.

Massive Lumps!

3 C Cocoa
3 C milk
3 C marg
12 C sugar
2 T vanilla
3 C peanut butter
18 C oats


Macaroni And Cheese

makes 50 or (100) servings

Preheat oven to 350

3 1/2 lbs (7 lbs) macaroni
Cook mac in water with 2T salt

Melt 1 1/2 cups (3 cups) margarine
Add: 2 cups (4 cups) flour
2(3 ) T salt
Cook until bubbly a couple minutes
Add slowly stirring constantly with a whisk 1 Gallon (2 gallons) hot milk
Cook until thickened.
Add 4 (8) lbs grated cheese, stir until melted.

Put macaroni in a 4" (or 8") steamtable pan. Pour cheese sauce over macaroni and mix carefully. Sprinkle bread crumbs on top and bake for 35 minutes.


The Farm Yeast Cheese

2 cups nut. yeast flakes
2 cups flour
2 tsp salt
4 tsp garlic powder
8 cups water
1cup oil
4 tsp wet mustard

Mix dry ingredients in a pan. Whisk in water.
Cook over medium heat, whisking, until it thickens and bubbles.
Cook 30 seconds, then remove from heat, whip in oil and mustard.
It will thicken as it cools but will thin when heated, or add water to thin it.

FOR PIZZA
Substitute for the flour: 1 cup of cornstarch and 1/2 cup flour.
Add as much as 1 cup of water at the end, or as needed to make a thick,
smooth sauce that pours easily


Farm Mac 'N' Yeast Cheese
Serves 25

Cook 17 1/2 cups elbow macaroni.
In a pan melt:
2 1/2 cups margarine over low heat.
Beat in : 2 1/2 cups flour
with a wire whisk until smooth and bubbly (2 minutes).
Slowly whip in :
17 1/2 cups boiling water,
1 Tbsp salt,
1/2 cup soy sauce,
3 Tbsp garlic pwdr,
1/2 tsp tumeric,
beating well to dissolve the roux.
The sauce should cook until it thickens and bubbles.
Then whip in: 1 1/4 cups of oil
5 cups of nutritional yeast flakes.
Mix sauce and noodles in a steamtable pan and pour alot of sauce on top.
Sprinkle top with paprika and bake for 15 min. at 350 degrees.


Golden Yeast Gravy
Makes 1 gallon

In a pot toast over low heat:
2 2/3 cups flour
2 2/3 cups Nut yeast
Add :
2 cups of oil
cook for 2 minutes until bubbly.
Add :
1 gallon hot water
slowly , whisking it in.
Add :
1/2 cup of soysauce
Cook until thickened


Waffles
Makes 1 1/2 gallons or 50 - 60 waffles

Combine in a bowl:
12 cups flour
1/3 cup + 2 T baking pwdr
2 T salt
1/2 cup sugar
Combine in another bowl:
18 egg yolks
2 1/4 qts milk
1 lb. shortening
Add to dry ingredients. Mix on low speed just enough to moisten dry ingredients. Beat the 18 egg whites until stiff but not dry. Fold into batter.
